Chameleon on the Lake

251 County Route 67, Saratoga Springs, 581-3928. Restaurateur Richard Rodriguez creates a festive tri-level eatery on the shores of Saratoga Lake, featuring an intimate lounge, seafood and steak menu with a Mediterranean flair and outdoor deck with shrimp and oyster bar. New executive chef Fortune Macri is from Las Vegas, and brings to the Chameleon his background in global cuisine. Full bar and extensive wine list, 40-seat outdoor dining overlooking the waterfront. Catering available. Boaters and others dressed for the outdoors are welcome. Serving 4-10 daily (lunch on weekends in the summer). AE, D, MC, V. $$

Hidden Café

Delaware Plaza, Delaware Avenue, Delmar, 439-8800. Intimate and casual dining featuring falafel, kabobs, wonderful salads, innovative entrées created by chef-owner Joseph Soliman. Serving 11-3, 4:30-9 PM Mon-Fri, Sat 4:30-9, Closed Sun. MC, V. $

Monument Square Café

254 Broadway, Troy, 274-0167. Serving continental cuisine with Italian and Mediterranean influences, using fresh ingredients with a strong focus on presentation. Spigalina

80 Main St., Lenox, Mass., (413) 637-4455. Intimate dining in a cozy, 200-year-old house with a wraparound porch in the village of Lenox. Creative and colorful Mediterranean-inspired cooking featuring fresh seasonal ingredients; every entrée has its own unique starch and sauce. Signature appetizer is warm goat cheese surrounded by shredded phyllo dough, fried, atop a salad of dried cranberries, walnuts, almonds and mesclun. Entrées include pastas, risottos, Spanish seafood stew, grilled meats. Full bar, takeout available, reservations suggested. Serving 5-9 Thu-Mon; closed Tue-Wed (open seven days July and August).
